Atkins Diet Recipes: Low Carb Pancakes
Here is my breakfast Low Carb cooking video where I make my favorite low carb pancake recipe. This isn’t Induction friendly due to the Baking mix, but you could substitute some almond flour to make it Extended Induction legal. (There is an understanding by some Dr. A said they (nuts) could be added after 14 days.) Here’s the recipe: * 8oz pkg cream cheese * 3 eggs * 3 tsp Splenda or equivalent liquid Splenda * 1/4 cup Atkins Bake Mix *recipe below * 1/2 tsp baking powder * 1/2 tsp vanilla * 1/4 cup Heavy Cream or buttermilk Beat cream cheese with mixer until blended smooth. Add the remaining ingredients, and let sit for 5 minutes. Preheat non-stick pan to med/high heat. Spray pan with non stick spray and use 1/4 cup measure per pancake. Yield 10 pancakes. For Pancake Syrup, I recommend Maple Grove Farms Sugar Free syrup ( bit.ly ) Nutrition Info: Total Calories 107, Fat: 10g, Carbs: 1.7g, Protein: 4g

Betty’s Old-Fashioned Caramel Popcorn Balls + Halloween Fun with Carter
In this video, Betty demonstrates how to make Old Fashioned Caramel Popcorn Balls. These are the kind of Halloween treats that were handed out when I was the age to go “trick-or-treating.” Our grandson, Carter dropped by during the popcorn ball making to show off his Halloween costume. Ingredients: 8 cups popped corn ¾ cup brown sugar, firmly packed ¾ cup white sugar ½ cup light corn syrup ½ cup water 1 teaspoon white vinegar ¼ teaspoon salt ¾ cup butter Measure 8 cups popped corn into a large bowl or pan. Sort out any un-popped corn and discard. Combine ¾ cup brown sugar, ¾ cup white sugar, ½ cup light corn syrup, ½ cup water, 1 teaspoon white vinegar, and ¾ cup butter in a 2-quart saucepan. Heat to boiling over medium-high heat, stirring frequently. Cook constantly to 260 degrees on candy thermometer (or hard ball stage). Reduce heat to low; stir in ¾ cup butter until melted. Pour syrup in thin stream over popped corn, stirring until corn is well-coated. Cool slightly. Butter hands, and shape mixture into 3-inch balls and place on waxed paper. Your must squeeze the popcorn tightly into balls, otherwise the balls may have a tendency to fall apart before they dry. You may speed up the process of getting the popcorn balls to set up by placing them in the refrigerator. Store in an airtight container, or wrap individually with plastic wrap. These are delicious treats at Halloween time, but should be given cautiously to children, as they may not be used to eating popcorn …

Greek feta, crumbled or sliced 1 tsp. dried Greek oregano 3 tablespoons extra virgin Greek olive oil Great Greek Salad 1. Wash, core and cut the tomatoes into wedges. Place in serving bowl. 2. Wash, peel, and slice cucumbers into ½-inch rounds. Place in bowl with tomatoes. 3. Peel onions, cut in half and then into 1/8 — inch slices. Place in bowl. If using peppers, add to the salad. * 4. Season lightly with salt. Place feta on top. Sprinkle with oregano and dress with extra virgin Greek olive oil. Serve. Best Greek Salad and Mediterranean diet * Optional: You can also, of course, add a few (6) Greek olives, preferably Kalamata.
